Yeast free bread requires no yeast for rising, but it does require another raising agent such as baking powder or bicarbonate of soda. The alternative rising agent reacts in the wet mixture and releases gas which causes a single rise.
The yeast free dough will be compressed during the second kneading and will not rise again if you use a normal yeast bread setting with multiple rises. Instead, use a bread machine setting that allows for only one rise such as “Quick” or “Rapid”. The Cake setting may also work. Banana bread and corn bread are popular non-yeast breads.
